Had my 1979 about a month and love it, done 5 or 6 cooks. I always use the temps on the pit thermometers, mainly bottom left. Made 2 briskets this weekend and noticed they were cooking too quickly. I threw in my digital probes at the center grate level and they all read about 30 degrees hotter than the thermometers on the pit.

11 hour cook, the briskets were ok but not great. Certainly felt like they were cooked at too high a temp, dried out more than I liked.

Anyone else have this issue of the temps on the pit thermometers running cooler than digital probes? What am I missing?
