NCL Encore Alaska Excursion Recs

I am sailing on the NCL Encore from Seattle on July 5th (7 day cruise). From what I can tell, the Skagway day is the only true port day long enough for any kind of meaningful excursion. Based on what I've read so far, that port is also the weakest in terms of just walking around and exploring town. I am thinking about paying for one really cool excursion there (like an 8hr glacier hike/mountaineering), instead of 3 just ok ones in Juneau, Skagway, and Ketchikan.

If I were to use our 4-5hrs in Juneau and Ketchikan to just walk around and explore town, would I be missing out on any MUST SEE nature attractions? I'm not a huge shopper, especially cheap touristy knick knacks, but I do love unique architecture and walkable downtown areas.

In Ketchikan, I'm pretty sure there is no time to really do anything else, but in Juneau, would I be better off heading up to Mendenhall Glacier or Auke Lake for the day?

I'm looking for a city commuter bike for riding around the neighborhood (brewery, farmers market, etc.).

I love the look of the step through dutch style bikes with the rear racks and fenders, but am looking for one that is relatively light (will have to bring it upstairs into my house). My neighborhood is also a little hilly, so gears are a must.

Ideally, I don't want to spend more than $500, if that's even possible. Anything too expensive I would worry about getting stolen. I am 5'9" with a 32" inseam, so would need to be a larger frame.

I haven't ridden a bike in a very long time, so I don't even know where to start.
