Graduate entry LLB- useful for non lawyers?

I’m considering doing this course with the intention of improving my academic skills and broadening my education, as my current degree is very niche.
I’m not specifically looking to qualify as a lawyer as I’m Scottish anyway but hoping it will lead to roles maybe in the civil service or third sector.
I’m currently working a low paid trade job with little advancement but I did very well at school and in university.
For the next few years I’ll be living abroad for my partners work and continuing with my trade job there, hoping to return to Scotland after that but will likely try and take the modules covering international and EU law in case we decide to stay in Europe.
I just want to make the most of my time away so if/when we return I have better chances of working an office job as my current work is physical and mind numbing and I can’t do it forever.
I constantly see people say law is a very oversubscribed subject and a law degree is useless but honestly apart from some very challenging STEM subjects which I’m not suited to this seems to be the common attitude.
If this is just going to get me nowhere though I’d like to just enjoy my free time.
Can anyone advise based on their experience if it’s worth doing it or should I just enjoy my free time?
