Elephant garlic assessment

Approximately four months ago I planted a clove of store bought elephant garlic that had sprouted. I’ve never grown garlic before but it seems to be going well.

There are new shoots growing alongside the main stalk and the bottom leaves are drying out. It hasn’t produced any flowers, however I’m of the impression that it should have. As you can see in the photos I removed some of the soil to see what progress was taking place below. I didn’t dig too deeply as I didn’t want to damage the plant (I didn’t see a bulb).

I just wanted to get an assessment/advise on care from those who are familiar on how things are looking.

I’m guessing this is a tree?

I added some herbs from seed amongst my tomatoes and noticed quite a few of these guys growing. They don’t look like anything that I might have planted or have ever seen before. Due to the weather things have been slow to grow so it’s difficult to see what they’re developing in to. Any idea as to what it might be (no conclusive hits on Google)?
