After 20 Years Of Trial And Error, I Accidentally Created A Garlic Sauce That Ruined Store-Bought Sauce For Me

First off, first time posting something here. yay me :D

I didn’t set out to make some “secret sauce.”
I just kept tweaking garlic sauce over and over for almost 20 years because every store-bought version tasted weak, sweet, watery, or just… sad.

At this point the recipe barely exists on paper because it evolved entirely on instinct.
No measurements. No structure. Just “use feeling.”

But the current version has become an absolute monster.

The Base

  • Full-fat mayo
  • Fresh crushed raw garlic
  • Lemon juice

That was the original foundation years ago.

Then things escalated.

The Evolution

Over time I started layering different kinds of garlic flavor:

  • raw garlic for sharpness
  • fried garlic for depth
  • chili garlic oil pastes for richness

The current version uses:

  • a Thai-style smooth ground chili & garlic paste in oil
  • Japanese furikake/nori seasoning
  • salt
  • black pepper
  • oregano
  • fried garlic elements
  • enough garlic to legally concern nearby countries

The weird ingredient that changed everything was actually the seaweed/furikake.

Tiny bit of marine umami + MSG + mayo somehow makes the whole sauce taste deeper and more addictive without tasting “fishy” at all.

The Problem

Now normal garlic sauce tastes broken to me.

Most store-bought sauces suddenly taste:

  • too sweet
  • too thin
  • bland
  • one-dimensional
  • afraid of garlic

Meanwhile this thing tastes like it was engineered by an exhausted line cook with anger issues.

The Funny Part

I still cannot give exact measurements.

Every batch is:

  • taste
  • adjust
  • regret
  • more garlic
  • taste again
  • accidentally create chemical warfare
  • perfect

Sometimes it becomes a little too aggressive.
Then the mayo goes up.
Then the garlic goes up again because weakness disgusts me.

Balance is temporary. Garlic is eternal.

Current Experiments

I’m considering introducing spicy Korean Buldak sauce into the system next.

This may either:

  1. elevate the sauce further
  2. end civilization

Will report back if I survive.

Garlic scapes have arrived!

We grow primarily elephant garlic and music garlic, and their scapes look wildly different. The first few pictures are of elephant garlic scapes and the last couple are of music garlic scapes. They are delicious!

Crunchy Garlic everything ✨

Are you also a fan of garlic especially yung crunchy? MANNNN this is my holy grail.

Put it on everything, ofc except sa may sabaw 🥴

I love it on fried rice, pritong ulam, saucy, boiled eggs with mayo, siomai, at kahit saan na applicable sya gamitin hahahahaha

The best part is hindi sya kumukunat katagalan, i think it's because of the oil they soaked it in to preserve the crunchiness. Medyo oily na nga lang sya pag paubos na...

Garlic in a Shot Glass UPDATE

I did this wrong last time and got yelled at by some random poster.
That doesn’t mean I know how to do it right now, so thanks for nothing from them..
That being said here is an update on my
Garlic in a shot glass from a few days ago!
(I still haven’t cut it or eaten any of it, I’m just kinda seeing what’s going on…)

But this time I know how to add text to the picture, so that jerk can go eat my shorts.

How do you get rid of the garlic smell from your nose?

I love my partner and we both like very seasoned food (including garlic) but they get pretty severe garlic breath and it doesn’t matter if they eat a mint or brush their teeth, their nose is left diffusing the smell from their lungs for hours (and sometimes a full day) and it’s hard to kiss them or be close to them. I have a sensitive nose and can’t stand the smell anymore, is there any way to diffuse that smell quicker? Even trace amounts of garlic in restaurant food gives them a smell so it’s a common occurrence.

Garlic falling over

Growing garlic for the first time this year and they started out so well. Now they are falling over (not completely, just slanted) and the leaves are turning yellow. I may have planted them a bit shallow but not sure if that’s the reason. Any help is greatly appreciated, thanks!

Sprouting Garlic in May- Plant?

In the pic, I have some garlic sprouting. It’s zone 7 in mid May here. Can I plant this to conserve the clove? I’m thinking it will not grow much, but will it have enough time in the summer heat? Or is this sprouted garlic too late since no roots but sprouting?

Finally got my toum to work!

I didn't need to add any water. Instead of using the food processor I used the stick blender and it came together quick!

Soo garlicky and great. I even use it straight as a salad dressing besides a condiment

Garlic in a shot glass

Hi. I’ve never posted before, and literally made this account to ask what I’m supposed to do now.
I noticed a garlic clove was shooting, so I put it in a shot glass with water on the roots. Now it’s really tall and I don’t know what to do with it. I’m thinking I want to plant it, but I am lost. If I cut the green part off, will it grow more? If I plant it, will it grow more? I have other cloves that are shooting. I’m just bored and want to know what will happen. And I like garlic.

When to harvest elephant garlic

Growing for my first time and these shoots are out of control. I’m talking five feet tall but I’m curious when I should harvest the bulbs? Do I wait for the flower to bloom (kinda want to see them) or do I snip the shoot so more energy gets put into the bulb? When do I dig it up? Do I need to hang the bulbs and how do I prep some cloves to replant? Thanks I have no idea what I’m doing.

Curing question - 8b

First time garlic grower here! I think I planted a little early for my zone and my plants are looking suuuper close to harvest time. My question is about curing. It’s already getting warm here (looking at 90s next week). Can these still be left outside to cure in those temps as long as I keep them in the shade? I’m honestly not super optimistic about this crop because I planted too early and it ended up taking forever to get cold here, but I don’t want to ruin whatever I have by letting it get too hot. Not sure if it would be too cool in the house. Or if the smell would be too strong in there? Any tips appreciated!

Should have planted more! - 6b

Zone: 6b

Cultivar: Chesnok Red from Keene Garlic

First year planting garlic from a supplier( previous 2 years I just planted cloves from store bought - I have since learned about the problems/issues with doing this). In the ground before Halloween. Mulched with shredded leaves from my yard. Watered a few times over the last month when I watered the seeds/plants I started this year. I think they are looking great! Will definitely add another row or two next year(33 plants up this year).

I did till 40 lbs of Lime and 8 lbs of 13-13-13 into the garden(800 sqft) in September last year based on a soil test.

Garlic success!

On a whim, I threw in a couple of heads of garlic in the ground last October.

I am very impressed with how well they grew, how well they integrate with other plants, and how little effort they took to harvest.

I'm definitely going to scale up this fall and plant a 30" x 19' bed of them in October!
