Harvested too late

It was out first year growing garlic and we kinda screwed the pooch. We're in zone 5B and I thought early July would be too early to harvest, so we stopped watering mid July with the intent to harvest in early August. Well, probably 90% of the bulbs are bursting open.

Is it worth even trying to hang the split ones at all or should I be going straight to processing for freezer/dehydrator?

We use a ton of garlic, but no way we're getting through 40 fresh heads of garlic if we cant cure them.

What do you do with your botched, but otherwise safe creations?

I went head first into canning and made a bunch of canned goods last fall. My pickles flavor wise are good, but they are terribly mushy. Like no way I could just snack on them. They are alright on a sandwich, but no way I'm going through 5 pints that way in a timely manner. Same with my nectarines. They're a bit mushier than I'd like and so incredibly sweet that I don't want to feed them to my toddler. Good news is the applesauce came out good 🤷‍♀️

So, what do you do when this happens? Cut your losses and toss the contents? Suck it up and eat it so none is wasted? Gift it to your friends that you know won't say anything negative about it?
