Why are you not supposed to jump back in drills like Snatch Pulls, when elite lifters do it in full snatches anyway?

All the guides online say momentum should be purely upward, yet every video of guys like Lu Xiaojun or Tian Tao shows them clearly jumping backwwards as they snatch. There was a drill Klokov used for his seminar where he encouraged the lifters to jump back onto some plates. People say this creates the 'looping' bar path that you should avoid?
