From someone who once was in the restaurant business long before InKind existed-

InKind’s financial logic can make sense at spreadsheet level and look attractive in a capital‑scarce environment, but the UX and commercial rules create a volatile surface area that erodes guest trust in the venues that participate in the rapacious nature of the terms.

Stay away.
