Which Faction?

The thought of picking up a new faction with completely new mechanics just seems so daunting sometimes. What are some good suggestions for an relatively easier to pick up faction that isn't gonna make me go nuts? I also like to play defensively with ranged armies in manual battles; can't even begin to think of how to tackle melee-superiority army factions...

Context:
Have been playing on and off since WH1 (~1300 hours across all 3 warhammers), but I think my faction choices always end up being more or less the same. Technically i'm not a total war newbie (played alot of shogun2 & 3K), but I still feel like a WH newbie because I don't know how to set up other factions other than these few below.

As a ranged enjoyer, out of all my campaigns (mostly legendary/VH) I've probably played:
75% high elves
15% dwarves
9% wood elves/chorf/empire
.....
and 1 solitary beastmen campaign

Also does anyone feel like the gameplay gets stale after a certain point? Alot of it ends up as building construction multitasking championship after 100-120 turns
