Do painters stand on counter tops to reach above the kitchen cabinets?

I have granite counters and I'm worried they will crack.

Wife recently returned from a Napa Valley trip. She had a tri-tip sandwich at Buster's BBQ in Calistoga. Ever since she's been wanting me to cook a tri-tip. We're on the east coast and tri-tip is hard to find. I finally sourced one. How to I cook this thing? Grill it or smoke it?
