new user, looking for best practices for IRC and help with common problems

sorry if i'm not speaking fluent reddit, i dont use it much anymore. i've been finding various instant messaging things to be very... i dont know how to describe it, but kinda nasty, and only deemed "usable" due to popularity. because of this i'm looking to try what i havent tried yet. the only things i really know about IRC is that it's not really popular anymore, and that it came before modern instant messaging.

iPhone SE (3rd gen) iOS 26.4.1 help

[us/we = i/me, we use us/we cuz its more comfortable just fyi]

We need help jailbreaking the aforementioned phone. Thought to ask here, since you all know a lot more than us. If possible to do so without erasing data, that would be great! If what we're looking for doesn't sound like jailbreaking, please let us know.

Don't have internet access on the phone, but do on computer (mint cinnamon)

We've heard of sideloading, jailbreaking, and a few other things, but don't know the details of each. If anyone is willing to explain that would also be lovely.
