Hey I’m going to be in Athens in 10 days or so and I saw some shops that are apparently selling Japanese knives including Deba,

As a leftie who’s never owned a Deba what should I be looking for in general ?

Chefs of Athens do you recommend a shop ?

Edit : professional chef working in Michelin star restaurants ( could go for carbon steel if recommended I’m already using a carbon steel as my main utility)

Hey so I see more and more amazing craftsman making some amazing knives out there I’m thinking about people like Kamublades or any good craftsman

I’m currently located in Greece in Paros more specifically and I’m looking for someone that I could meet close ish by (Paros Naxos Mykonos Athens etc) to work around a custom built

Any good recommendations ?

Hey there,

So this just happened. I got all my knives stolen, I was running with a Hitohira Togashi White #2 Kurouchi Kiritsuke and a Hitohira TD Blue #2 Stainless Clad Kurouchi Honesuki Kaku 150mm along with a pretty standard set of global knives

I’m looking for recommendations, I work in Europe am left handed and I don’t really need 20 knives tbh, one good main + one or two good other for the specific tasks (I work with a lot of fish and meat) if you can provide the link for the suggestions it would be amazing

Budget wise I’m looking for something in between 500-1000€
