Batch brew vs pourover in 'specialty' cafes?

In your experience, how big of a difference in the quality/taste between batch brew vs pourover in specialty cafe? (ones that are specialty enough that will show/let you choose you what beans)

pourover I see is usually double or more, and it feels a bit hard to stomach as it cost close to half a bag of beans (and I know it takes a lot more time and attention for them to make pourover that's why they price it so high)

Very thick wall with 1 pour method. Any tips?

So I’ve been doing the James Hoffmann ‘pulse’ method with decent success (though I don’t swirl for additional agitation as suggested), but want to try out recipe which has easier workflow. So trying out Lance 2 x 30s bloom then 1 pour method.

However every time I do that, I get a bed like below, where the side wall is very thick, unlike the ones I saw on Lance video. I did do a ‘circular coin-like motion’ when pouring, not just pouring straight down the middle.

Taste wise it feels a bit more ‘flat’ than the pulse method. (Though could just be placebo)

My grinder is k-ultra, using 7 tick, 90degree water, medium roast. 15g to 225g water

Is it my pouring technique? Or my grind? Or is that thick of a wall normal for single pour?

So after heating up my pan for a few minutes, I notice that when i do the water test, the water slide great, but sizzles towards the edge (as in the vertical part) when I try to pour it out.

I also notice there is a bit of 'hot spot', the middle cook slightly quicker (is pretty obvious when i cook diced chicken). I have a electric hob, and the hob itself is slightly smaller than the pan base

Is this considered normal? Or is it because my pan is poor quality? will a more expensive pan prevent hotspot issue even if the hob is a bit smaller than the pan?

So I’ve been coming back to more structured cycling training and doing FTP builder to start with.

All the workout feel OK (on week 4), and I can get through all the hard workout and meeting all the power requirement without fail and don’t feel like collapsing in the end. (Always feel like I can probably do 1 more interval set in the end if need to)

However, in the workout when there are some 6mins sweet spot or 1min FTP interval, I can get through the interval, but I can tell that I won’t be able to do that straight for 1 hour, nowhere close. More like 10-15mins and that will feel like 9/10 effort

Does that mean my FTP set is too high and I should lower it? Or should I just keep it since I can get through all the prescribed workout ?
