Gluten Free Wheat Starch Reaction

I just want to know if other people have the same experience or if I'm being paranoid.

Yesterday I got my first gluten free food prescription (I was diagnosed over a year ago but have since moved from an area that doesn't prescribe to one that does) and I was excited that it included products made with gluten free wheat starch because I thought they'd be particularly good and I googled around and only found confirmation that it's completely safe.

I ate two Juvela bread rolls at lunchtime and a few hours later, the cramps hit. I had the gluten-typical catastrophic evacuation and today I'm still sore, queasy, and very brain foggy and depressed. I struggle with my mental health in general so the way that glutening affects my mental health is my main concern.

Sensibly, if I want to know for sure if it was the gluten free wheat starch, I should try the bread again. But I don't want to take a further toll on my physical and mental state. I wondered if anyone else has this experience or if everyone is finding these products just fine? I'd love for the answer to be that everyone else is finding them fine and the gluten snuck in somewhere else. (However I haven't eaten outside of home in over a week and have eaten nothing else new in the last few days.)

I'm so confused because this is literally the food I got on prescription from the doctor!
