Best loaf pan yet.

Thanks to the person who posted this recipe, I’m sorry I don’t know your name.

300 grams water

150 grams starter

25 grams maple syrup (I used honey)

20 grams olive oil

10 gram salt

500 grams bread flour

First mix it altogether in kitchen aid mixer for several minutes.

I then put the dough into a King Arthur plastic tub and rested it for 40 minutes.

Then 4 stretch and folds about 30 minutes apart.

Let rise by 70%, took 3 hours.

Shape and put into 9x5” pan, let rise to slightly above rim. Slash the top.

Bake at 425° for 30 minutes,

Reduce temperature to 400° and bake 20 more minutes.

The bread temperature was 209° when I removed it to cool.

I am 70 and have had 5! Shoulder surgeries and cannot lift screaming hot Dutch ovens so I’ve been trying a loaf pan.

I do add a pan of water when I preheat the oven to create some steam.

This bread is delicious.
