Breville espresso shot help

I got a breville barista express about 5 months ago, and when I first got it I had minimal issues dialing in the beans. I tried 3 different types, and one of them was a medium roast from a local roaster. For that I had the grind on 6, the internal grind on 6, and used 15g in (any more and the basket wouldn’t fit into the machine), 30g out and it tasted great. I tried another bean and every single time I tried to pull a shot it was bitter or sour, even when the numbers were right (doubled in grams in 25-30 seconds). I went back to the beans from the local roaster and tried it on the same settings but set the internal to 4 (left it from the last disaster beans) and it came out way too fast. Then I put the external down to 1 and am getting 16g in and 32g out in 28 seconds, but it’s still very bitter. The pressure gauge reads in espresso range like it’s supposed to. I took out the plastic part in the basket so that’s clean now and have flushed the system with just hot water and everything moves fine, but does anyone else have any ideas why it keeps pulling so bitter? It seems like it just happened out of the blue because at the start I could dial it in in a couple of tries. If anyone knows any other could fix that please lmk!

Is there anyone that can recommend a place around Charleston (downtown, mt. Pleasant, WA areas) to get alterations done for a bridesmaid dress? I just need about an inch or two off the length, the rest fits perfectly. It’s the silk stretch fabric from azazie. Looking for someone to do it for a good price thanks!
