This was really good! The spices were amazing and the coconut curry sauce had so much flavor. The chickpeas paired perfectly with the jasmine rice. I added the bread roll.

Pumpkin Spice French Toast Bites with Apple Burboun Compote

7/10. This was okay. The pumpkin spice coulis tucked inside the Hawaiian-roll French Toast was actually really delicious, and I wish there had been more of it to drizzle over the top. The apple bourbon compote was good on its own, but it didn't really match the dish for me. I would have preferred extra pumpkin sauce instead, since that was the standout flavor.

Caribbean Stewed Okra with Red Beans & Rice and Sweet Plantains

Good overall, but not a standout for me. The plantains were the highlight—sweet, caramelized, and delicious. I enjoyed the subtle heat on the back of my tongue, but I felt the rice and overall dish needed a bit more seasoning and flavor to really shine. It was tasty and filling, just not as flavorful as I was expecting. 7/10.

I added my own dinner roll.

Black Bean Quinoa Taco Bowl

This was so good it came with tortilla strips to put on top and a side of guacamole. It also had mango salsa which added a nice sweetness/flavor profile to the meal. The corn was sweet too. I enjoyed this for dinner last night!

9/10. This was one of my favorites so far. Sweet potatoes are already one of my favorite foods, so this meal had a head start. The sweet potato was soft and flavorful, and the curry chickpeas and spinach paired really well with it. It was very filling!

Couscous-Stuffed Eggplant

7/10. This was really good! The couscous and veggies worked well together, and the lemon tahini sauce was delicious. My only issue was that there wasn't enough sauce for the whole meal. I'd definitely eat this one again.

Three-Bean Crispy Rice

3/10. The tangy soy lime sauce was the best part of the meal, but the crispy rice didn't really stay crispy. It felt more like clumped-together leftover rice than anything crunchy or exciting. I warmed it slightly because eating it completely cold felt odd to me, but even then it just wasn't very enjoyable. I finished it, but I wouldn't order it again.

Okra & Mushroom Gumbo with Coconut Lime Rice

I gave this a 3/10. The sauce was okay, but the oven instructions made my rice too crispy. If I had added a little water and microwaved it instead, I think it would’ve been better. I wouldn’t get this one again.

Middle Eastern Eggplant Parmesan

This Middle Eastern Eggplant Parmesan was so good I’d give it a 7/10! I baked it, and the cheese on top was a nice thick layer—super satisfying. The portion was huge! So I had to save half for the next day. The eggplant got crispy in the oven, and honestly, it was just plain tasty. I’d definitely eat it again!
