Bit lost between OSes and need help picking one

Overall, I'm a tech person, I'm a programmer by trade, so I understand the differences in terms of used CPU chip etc but also the openness of systems for stuff like sideloading.

I used to be angry at Apple for limiting customization, making you use stuff their way, etc. I'm over that now, as I grew older and matured. I currently use an Android phone, a Google pixel 8, but I don't customize anything. I just don't care about it anymore.

I want my phone to give me overall a premium user experience, whatever this might mean. The system looks, animations fluidity, cohesion, how polished and reliable everything is. E.g. my pixel constantly has issues with reception, be that data or even Bluetooth and earbuds tend to stutter or be connected, but when I select them as audio output, they don't play sound anyway, because the phone does not select them

One thing I really want to keep is blocking ads, sponsors, annoyances etc. I mean YouTube revanced and YouTube music revanced. I know this is not a thing on iOS, but are there alternatives? Like some premade apps that include all that? I want these capabilities in web browsers too

In terms of Apple, I'd just get a phone, and keep my non apple earbuds and rest of stuff. Would that be an issue?

Overall, giveny context, what I want etc, would you recommend an iphone or an Android phone and why? I'm just afraid that I would regret my decision, because I want to keep my phone for years to come. Just get one and stick to it.

How have you quit customizing?

Hey, so I believe I might have the maximizer personality. I pursue the perfect, most premium user experience which is straight out of 2026 in terms of design and user interface. So KDE is the natural pick, because you can do everything here. I want that glass morphism looks etc

Whenever I pick an option, I don't stay with it long. E.g., layan is nice but I don't really like the violet color it uses. Colloid is cool, but it is not glassy with blurs. When I use Kvantum, the pane with the buttons at the bottom of the e.g. settings app looks different than the rest of the window. If I use klassy and round the window corners, the icons in the corners are off (too close to the border) etc. If I mix and match different parts of different themes, I lose the cohesiveness and can't stand it (the Frankenstein effect). I also am not a designer so I won't be able to come up with a design I like on my own. I need something premade.

Once you set up a few themes you like, it is super easy and quick to switch between them so that doesn't help.

To people who were similar to me, how did you quit the customization loop? How do you just pick one and stay with it? What specific config do you use, what themes etc?
