We are having buffet style catering and need to finalize our menu for about 100 people. The serving size says feeds 25-30 per full tray so logically we only need 4-5 trays but that seems like too little. We can confirm with the caterer that that will be enough but my question is: Would you opt for fewer options for main dishes with the thought that everyone can have some, or give more options but it would mean that some people wouldn't get to try everything.

For example, our top contenders for Mains currently include:
Chicken picatta
Baked haddock
Pasta with meatballs
Shrimp Mozambique
Broccoli Alfredo
Pulled pork
Mac and cheese
(We will also have a salads/sides)

Would you narrow it down to just like 1 meat, 1 seafood, 1 veg, but have multiple trays of those three? or keep all 7 dishes so that people have lots of options, even if that means not everyone will get to try everything?
