When you leave Europe, and Italy specifically, what’s the process with regards to EES?

All the info regarding photos, finger prints, queues etc. seems to be in relation to arrivals not departures. We are leaving via Rome Fiumicino and want to try and gauge how much time we will need.

Can you only do finger print scan and photo once gate has been called or can you proceed straight to that area.
