Dog spay with a fear reactive dog

Breed: gsd sighthound mix
Age: 3 years and 1 month
Sex:female
Weight:30kg
Medical history: the only health issue she has is food allergies has a checkup every year, a very healthy dog in general, no prior surgeries or blood work, no concerns regarding health

It was recommended by the vet to wait until she was fully mentally mature to spay her due to her reactivity, it's gotten better over the years. Shes not a general anxious dog in and around the house, her only trigger is strangers she's not a bite risk she's just a timid dog that trys running away and creating space as much as possible that can include trying to back out of her harness and collar.

My question is what behavioural changes come with a spay? I don't want her reactivity to go back and undo all the progress shes made in the past almost 3 years of having her. She's also a very active dog (exercise 3-4 hours a day) so I know she might struggle with having limited experience with her triggers and that might also hinder her progression if she's not experiencing the outside world.

Thanks in advance!
