MIL in Kidney Failure how to discuss after death wishes-Fiance doesn't like to hear her talk about dying. Help

My MIL (67) is on dialysis due to kidney failure. She also has had a plethora of other health issues(diabetes, hip breaks, Bronchitis, shingles). Recently she had a partial hip replacement cause she keeps falling. She has 2 children my Fiance 27M and his sister 24F, who refuse to listen when she talks about death. My bio mom has always made it known to me how she wants things to go after she leaves earthside and the channels to go through. My MIL is comfortable talking with me, we have a great relationship and I've been with her son for 8 years. Whenever life gets her down she sometimes says things along the line of " this is too much I just want to give up" and that worries me because now she lives with my fiance and I post rehab from the surgery. My fiance is scheduled to leave the state for a job opportunity training for 4 months and I'm scared that she might croak over while he's gone. Is it my place to get information like life insurance, mortgage info, cemetery plot, beneficiary and will in order with her because her kids don't want to believe that she may go sooner than later? I feel like I could be a good mediator so things don't get messy and also be more emotionally stable to execute her wishes so our family can grieve without so much stress. She has siblings but they live out of state and some are estranged. One of her siblings for sure may step in and try to make it about her and take over things -which in turn already seems to be adding more to stress than help-. How do I go about asking her some of these things without sounding like I'm waiting on her death bed for her money( which I'm not-though she has expressed that she would leave me and her Grandchild something he event of her passing- ) Is there a specific order that things should be done to when she does go to make things more streamline? Or should I just hope that her kids will come around and listen to her about her aftercare wishes and process?
