Best career to go into for new graduates with work-life balance?

I’m a 35yo single-parent looking to go back to school. I’ve worked in the service industry for the last 16yrs, and I want to put my mind/money towards an industry that I can still drop off/pick up my child from school in. Remote ideal, but honestly just want something that I can get in at entry level. I’m freaked out by everything I’m reading about AI taking over, entry level jobs disappearing, unlivable wages, etc. I just want a livable wage, reasonable hours, and fricken health insurance. Please help!

My best friend from childhood had a baby earlier this year. I’m looking to get them something the baby can enjoy, but also worth keeping. Possibly a stuffy? Something unique and Chicago-themed. I’m already getting a baby-friendly book. I would like to get a stuffed animal or something cute and worth keeping even after they stop playing with it. I’m a mom, so I know how much stuff is just stuff and disposable.

I live in Avondale, and I’m willing to travel. I’ve checked Wolf Bait, Pixie and the Boy. I’m running out of places to look. I’m ok if it’s something they won’t immediately be able to play with because they’re still so little, but I’d like to keep it toddler-friendly.
