Struggling with Phil & Sébastien
So I have went through 2 bags of Phil & Sébastien without getting anything more then a " regular coffee" type of cup.
Bags were mystic melon and plum runner( half a bag left)
I'm using tww ( 1 packet in 2 gallons)
Recipe is as follows and stays standard
V60
20g coffee //320 g water
3x bloom for 45 seconds
Pour to 220g - slow concentric circles
Let drain , pour to 320, again slow circles, id consider this minimal agitation
I have tried 93, 94, 96 waters and im not getting anything out of the cups. 96 tasted too extracted and 92 was probably the best.
I have also tried the aiden recipe of
Bloom 92.5
3 pour , 94, 92, 90 respectively on temps for each pour
I'm confused because the above recipes ( standard temp is 93 for my v60 across a dozen coffees) will almost always produce great cups with proper notes and acidity across brands like dak, september, terminal 3( loca to Toronto) however both the mystic melon and plum runner bags from Phil & Sébastien are just not doing it.
I understand that the roasters i mention seem to be much lighter than the bags I'm struggling with as a reddit search calls phil and sebastein " medium to medium light" but I didn't expect these bags too be so difficult especially because the plum runner is a colombian which is my preferred bean.
my next thought was to try either 90 or 88 on the v60 and my dark roast recipe for aiden. however my confusion is that I'd 92 is already tasting slightly bland wouldn't going lower increase the absence of flavoring?
