Quick tip as I've seen a few ppl struggle with it-

When Latin spawns (before you choose a decision), change to the culture screen and change your view of Latin to Kindred, then become latin yourself to more easily assimilate throughout the empire. You'll probably have to stop accepting a couple of cultures (release as pronoia), but it should be fine as once Latin becomes bigger, having all the Italian cultures + Greek will cost like 1.2 capacity.

Do not remain Greek as it'll take a LONG time for it to become large in your empire + a ton of time lost in advisors + cost of manually switching. Instead, switch and immediately start assimilating greeks to latin.
