Wholegrain pancakes with sweet chilli tuna and mayo [homemade]
A nostalgic meal from my childhood that my mum made sometimes is crepes rolled up with white sauce and fish - usually tinned tuna but sometimes poached or baked white fish.
It was one of my favourite meals growing up but we didn't have it very often.
My friends didn't understand when I told them about it and they said that fish with pancakes is weird.
I haven't had it in years and felt suddenly motivated today.
Using just what I had on hand, hence the sweet chilli flavoured tuna plus jalapeños for luck.
I made the savoury pancakes with a mix of wholegrain spelt, rye, and wheat flour, and some buckwheat flour.
When I smelled the pancakes frying in butter I understood why the combo with fish works so well, and creamy white sauce carries the flavour. Mayo is a sub-par substitute.
