SIM accessibility

Hello everyone!

My partner and I are going to be travelling from Canada to Copenhagen for a week mid-June, leading up to a Pokemon Go event scheduled for the weekend of the 12th-14th.

In preparation for this trip, we've started looking into options for internet connectivity. Issue being, her phone is eSIM-compatible while mine isn't, and replacing a device I'm otherwise perfectly satisfied with would go against my principles.

Whenever I visit family back in France I simply purchase an -admittedly overpriced- temporary SIM card in one of those small shops you can find in airports and train stations with enough data to cover the trip. Is that something that's just as readily available in Denmark?

As an aside, we are also planning a one-day trip to Malmö sometime during the week. I assume SIMs would cover Europe as a whole, but would like to make sure.
