Lavender fields between July 29 and 31 in Sault and Valensole

My friend and I will be visiting Provence for the first time from July 28 to August 1, and we're really looking forward to it!
Visiting the lavender fields is one of the main reasons for our trip, but we've found that late July is the harvesting season in most areas. We wonder how the lavender fields usually look between July 29 and 31 in Sault and Valensole? Is there still a good chance of seeing beautiful lavender fields?
Our current plan is to live in Avignon. And we will rent a car to travel through Gordes, Roussillon, Arles, Sault, and Valensole. Do you have any suggestions for our plan? We're also wondering if there are any other villages or towns in Provence that you would recommend for first-time visitors. We love scenic villages, great local food, and beautiful landscapes, so we're very happy to accept any advice and change our plan!
