Cakey richness with pudding mix?
I've made somewhere around 20 pints in the past few months, some have used zero sugar pudding mix and some without. I'd use around 7g. Sometimes I noticed what I can only describe as a rich, cake like flavor that probably worked well with one flavor in particular but otherwise I personally find offpudding.
Recent batches included four distinctly different flavors of which I used the pudding mix and all of them included this odd flavor sort of underneath their own. My most recent batch though I decided to go without and the first pint didn't have this, and I could only describe the texture and flavor as perfect after two spins on lite ice cream. I'm curious if anyone else has a similar preference against the pudding mix, and maybe as a resource to anyone searching around in the future.
Just for the record a typical recipe, my latest, would be
480 g Fairlife Fat Free milk
1½ scoops PEScience Snickerdoodle protein powder
20 g allulose/monk fruit blend
¼ tsp xanthan gum
1 tsp vanilla bean paste
1 tsp ground cinnamon
¼ tsp salt
