Reverse seared a tri-tip for a little dinner get-together tonight.
Seasoned with Spiceology Garlic Junkie and Hardcore Carnivore Black. 250°F on hickory/cherry/oak blend pellets with post oak and a charcoal briquette in the smoke box until 128 internal. Five minute rest, quick sear, 10 minute rest, slice and serve. Turned out fantastic.
