I have been going GF and vegan for 2 weeks and it's the first time and it's the first time I tried something on my own (without any help from my mum)
Tried making vegan and gluten-free muffins for the first time and was fully expecting a dense disaster, but this came out surprisingly soft and moist. The top has a nice golden crust and it held together way better than I thought (no weird crumbling).
I used a gluten-free flour blend, plant-based yogurt, a little oil, and a flax egg. Let the batter sit for about 10 minutes before baking, which I think helped the texture a lot.

Flavor is still pretty basic, so I’m thinking of adding chocolate chips or blueberries next time, but overall I’m kinda shocked it worked.
