I know alot of people are going to have strong opinions on this. Id prefer people that are WAY into cooking to tell me what they think of their griddle of choice is rather than the weekend adventurer. I cook every meal, everyday and been wanting a flat-top for a long while now. Originally, I was going to get a Wolf gas-range, with a planca insert but lost my job and kitchen renovating is off the books for now. At the moment I have 3 I'm looking at:
Traeger flatrock for the best zone cooking. However, I can weld and do light metalcraft so I could put my own baffles in, in most grills. However, the BTUs are low and I'm worried about frying things that need to be on for seconds rather than minutes for a crust, i.e. wagyu/prime smash burgers, seared ahi tuna for nigiri, scallops etc.
Pitboss ultimate for the non-stick/low-mainenance top. There will be times I don't use my griddle for days, possibly months. The idea of not dealing with a rust bucket and having to reseason everything after a long amount of time not using it is ideal. The problem I have is that apparently the non-stick surface pitbosses have don't work as well to sear and we all want that maillard goodnes.
Finally the Nexgrill Daytona pro because frankly, I can get the 5-burner model for around $300 new rather than double the price of the other two. I know they're not the best made, but allegedly the pro model is more scratch and rust resistant and the warping issues from inferior metal is a thing of the past. Plus from what I can tell from the images and specs, it would pass the "toast" test.
