Chicken Lollipops!
First time attempting chicken lollipops. They turned out great! A decent amount of prep work but worth it imo. Seasoned with kinders cajun rub and basted with seasoned butter a few minutes before pulling them off the kettle

First attempt was last week, this time I got the bird a bit flatter and adjusted the grill grates thanks to the advice on my last post, it turned out better than last time :)
Cook time was an hour and some change, white meat temp was 165-170 and dark meat temp was 185-190. Kept the dark meet towards the heat and brushed some seasoned butter to finish it off
Attempted my first spatchcock chicken! Used the grill baskets and some water in a drip tray for some consistent heat and moisture. Turned out great! Although next time I’d like to get it a bit flatter, I found the legs and thighs got to temp before the breast at some parts. Tips and tricks appreciated, always learning :)
Tried out a new seasoning and it was great! And yes, doggo got to try it too
Tri-tip: Cuso’s Dirt + mesquite smoking chips
Chicken thighs (boneless, skinless): Spanglish Asadero garlic & lime, Kinder’s buttery garlic & herb + cherry & apple smoking chips
Excited with my first vegetable garden. Improving as I go, this sub has been a big help. Hopefully the next season is an even better harvest after learning from mistakes
Found a way to look forward to meal prepping. Just throw everything on the kettle!
Moved it half way through the cook to chill in the garden lol
Picked up this 40yo Weber Kettle from FBMP. Coming from a Weber Spirit getting a charcoal grill is a game changer.
Two zoned some Tri Tip, Bone in skin on chicken thighs, shrimp, and broccolini
Lump charcoal & mesquite chips
