Favourite lentil/bean/couscous/bulgur recipes?

Been meaning to eat more of these but haven't been able to find any recipes that speak to me. I find a lot of them are paired with things like rice and bread that makes macros awkward, let me know if you guys have any go to's I should try!

This might be my favourite recipe to date. Not as crazy on the volume scale but still very filling.

The sauce is made up of 120g roasted red peppers, 100g crushed tomatos and 3 cloves of garlic. Seasoned to taste with salt, pepper and msg and blended up

I used cooked shrimp so just tossed them in a bit of paprika, pepper and chilli flakes before quickly searing and setting aside.

Bit of onion in the pan, chuck the sauce in when they soften and let it simmer while pasta cooks. I used 60g dry wholewheat fusilli.

Once pasta is done and sauce has thickened, turn down heat and stir in 30g light cream cheese along with a splash of pasta water and mix until creamy and glossy.

Then we go in with our quartered cherry tomatos, let them soften up then add in your spinach and pasta. Let that wilt down, then mix aggressively to emulsify. Add shrimp back in and toss to combine. Finish with lemon juice.

I also added some frozen broccoli to mine, which I just chucked in the pan along with my onions. I think zucchini would be a good option in this dish, let me know if you guys have any good ideas for more veggies.

Topped with cinnamon and 0 calorie maple syrup. The brand per4m sells tubs of "flavour powder", imagine whey protein but 0 calorie - just the flavour. Personally I rarely use protein powder as 20g of protein is quite a lot of my daily target, and I prefer to use that for more meat for dinner. The flavour powder is a cool way to add flavour to yogurt/oats/shakes without adding calories - worth a shot!

Once again, I have made a delicious meal that looks like shit.

Anyhow, I love mashing up boiled potato, broccoli and cauliflower together. I personally leave the skin on mine because I like the texture. I go for a 2:1:1 ratio of potato-broc-cauli but do as you like, give it a splash of unsweetened almond milk and mash the crap out of it. Season with salt, pepper garlic and Italian herbs - insane volume for the calories, very healthy and tastes great.

Chicken thighs I personally just blast in the air fryer at 240c for 11 minutes. They're skinless and boneless fillets, and they get a nice crispy coating and stay juicy inside.

The salad is a take on the polish cucumber salad mizeria, typically made with soured cream. I went for fat free natural yogurt as sour cream macros are dogshit. Thinly slice cucumber and add in yogurt. Ideally a bit of sweetener, lemon juice, salt and pepper. But of dill goes a long way too. I added some cherry tomatos and onions to mine.

Very filling and satisfying meal that ties super well together.

Can't remember the last time I struggled to finish a meal but this did me in which is crazy.

- 1x can tuna

- 4x reduced fat bacon rashers

- 160g Sweetcorn

- 50g Lettuce

- 60g red onion

- 25g spring onion

- 45g red peppers

- 60g tomato

- 90g cucumber

- loads of jalapeno

Dressing is just greek yogurt, sriracha, ketchup and mayo. Also added in a bit of the brine from the jalapeños.

I think next time I will use a bit less sweetcorn and bulk up the other veggies a bit, probably just lower the portion size a bit as well. Could've definitely done with some pickles also! I used peri-peri seasoning but I will try bbq seasoning instead and probably go for some low cal bbq sauce.

I highly recommend having a look into Pudliszki no added sugar ketchup if you can find it, it is a polish product, the no added sugar can be rare outside of Polish/European shops though. The brand bramwells does a very nice lighter than light mayo which is 100 cal per 100g - very good for mayo.

Bowl the side of my head for 650 cals. Best part is you can add anything you want. This is a tomato base stew with cabbage, zucchini, mushrooms, onions, red peppers and potatoes.

I added soft tofu and tuna for protein. Personally wouldn't recommend the soft tofu, it kind of just disintegrated. Going to try super firm next time to have a bit of texture. Tuna was nice, but I think cod would probably be better.

Was just using what was on hand as forgot it was Sunday and shops were closed!
