I've recently purchased a food truck and am going through the process of having it brought up to Massachusetts code. Looking into the paperwork, I was told I would need a letter from a commissary kitchen. The closest one to me is forty minutes away and starts at $350 a month for ten hours. Every hour after that is an additional $35, with one dry storage shelf being $15 and one cold storage $25 a month. I can't imagine people are paying several thousand dollars a month just to be able to use a kitchen short term while being able to turn a profit without having insane prices. Is there a legal way around not having to use a commissary? I was originally planning to rent my current employers kitchen after hours for a fraction of what they're charging. It's already inspected by health and fire departments annually. Could I just not provide documentation that everything is being prepared in an already established kitchen?
