Buffalo sauce is hot sauce with way too butter. Mild Buffalo is just an excuse to slather things in butter, but it's orange so it's ok. Every other hot sauce is a balance of flavor and spice, to various degrees of success. Buffalo is also used by restaurants to get something spicy on the menu for the cheapest available price.

Edit: Unpopular opinion #2. If restaurants are selling their spicy chicken sandwich, and the thing that makes it spicy is the buffalo sauce. Then that means buffalo sauce is a hot sauce. This is also the gripe that inspired this post. I want to order a spicy chicken sandwich, but it's always buffalo sauce.
