[Music Video] [Anime] [70's/80's]

Hello!

So I remember a anime tribute/mashup that I recall being posted to reddit from the 70's or 80's but possibly as far as the early 90's if I'm honest. It was made by a company as part of some event to honor something or other, I think during a conference or expo.

Details I can remember: It centered around a little redhead girl who planted a carrot of some kind and she went on all these adventures. She even duels Darth Vader during it, which made it really stick out to me and makes me think 80's more that late 70's. It was set to music, but if I could recall the song I would be able to find the video.
