Suggestions for fun monster interactions

Been looking into running a monster hunt style 2/3 shot for a group in between campaigns atm, and would love to hear peoples' opinions on fun monsters to dedicate a proper hunt towards. Preferably monsters you think aren't used enough, or from your experience aren't ran to their fullest extent (dragons being a good example of typically being poorly utilized, but they're a bit basic for what I had in mind)

Would be especially cool if the monsters had cool existing lore that made running them more engaging! Any tips for making such an encounter more interesting would be greatly appreciated, so its not just skill checks to find creature, fight creature, done.
