I’ve been brewing exclusively with subtext coffee, and I get a cup that is muted almost all the time. I find that when I rest it for less than 2 weeks it tastes better, and is pretty good but even then the flavour comes out halfway in the sip. I’ve once rested a bag from them for a month, and it was super weak, like brown water, it only had a really faint fruity flavour. I’m wondering, those that are in Canada, how long they are resting the beans from subtext? I believe the climate has a lot to do with how long to rest? I had coffees from other roasters that tasted the same.

edit: I have tried James Hoffmann‘s 1 cup v60 at a 3.5 and lance Hendricks 2 pour method at a 5.3 usually.
