I have a Brama (BR-36SSGG) gas oven and I think I need to replace the temperature probe. Five pics provided. The temperature will hold for a while, then completely drop out with the fire still lit (holding at 200°F) or max out going to 500°F. Yes there is a cheap temp dial inside, but I have monitored similar control problems using a dual probe thermocouple monitor. I've called the manufacturer (they sold to Vinotemp wine chillers) and they will not give me any part numbers. I can't find a way to replace this really long thermocouple on the oven ceiling in picture 2 and the wiring going all the way across the underside of the stovetop. Please help if anyone knows where to get this part number and how to fix this. Or any other ideas.
Pictures: first is the oven front, second is inside the oven showing what I think is the oven temp probe on the ceiling, third+forth is where the probe wire feeds through the oven ceiling/rear and out the space beneath the range and into what looks like the temp control dial in the front, fifth is manufacturer label.
