I’m trying to achieve a nice, hard scoop, but my ice cream keeps coming out with the consistency of a Wendy's Frosty. When I tried to thicken it with more xanthan gum, it just turned into a gummy mess. I freeze it for over 24 hours as well.
I'm using half milk and half cream with about 4 tsp of sugar, 2 tbsp of vanilla, and 1/4 teaspoon of xanthan gum. Is my sugar too low to help it set, or am I overdoing the liquids? I’d love to know what adjustments I need to make to get a nice texture!
