Carb rejet basics

I think I need to replace the base gasket on my engine. I figured while I am doing this I might as well throw my expansion chamber on to replace the stock exhaust. I know I might have to rejet the carb during this process. I understand the basic concept but I am unfamiliar with the specifics , like I know there is different jet designs and that different carbs have a different number of jets. I would like to know how I can find more about the carb I have and what I will have to do to get the rejet done right. In case it helps I added a picture of the carb I have.

Expansion chamber upgrade

So I got a kit off bikeberry and I got it working. The expansion chamber I got from them doesnt clear the frame so I want to get a different one. I now know that bikeberry is basically cheeks so I want to source one elsewhere, so if anyone knows a good place to get one let me know. Also I know the basic principles of how an expansion chamber works but I am not sure how all aspects of the geometry directly effect its performance. I live in a pretty hilly area so I think I want something with more low end torque for hills, so if anyone has some recommendations on what to look for, for the best performance in this type of environment also please let me know. I bought a 2-stroke kit from bike berry. I do no how terrible they are now but I basically Finished building it so its too late now. I cannot find the actual fuel to oil ratio to use for the break in period and then for normal use. In one of their offical pieces of media it says to use 16:1 for breakin peroid then 18:1 then another says 16:1 and 20:1 then another says 40:1. I really dont know what to think now cuz 16:1 and 18:1 seem like way too much oil and I know bike berry has a terrible reputation for correct information so if anyone has the real answer lmk

Firstly I am sorry for the terrible photos, I have a flip phone. So I have a 60/80cc 2 stroke kit from bike berry. Yeah I know they have a pretty bad reputation. I am attempting put the chain on the bike now so I have both clutch covers off. I have the chain sized and am trying to put the reassemble everything. The problem I am running into now it the cover does not sit flush anymore so I cant put it back on, the pin in the middle of the sprocket seems to be sticking out farther than before too. I am lost on what to do to try to fix this and decided I should so I wanna see if anyone has any advice before I get too experimental and break something.
