No Scoby?

No Scoby?

I took a break from brewing about a year ago so it's been a while and I had to order a new scoby. After about 18 days of fermenting, it only has a thin film on top and no full Scoby formed but it's super vinegary now so I feel like it's past bottling time. Why didn't a new Scoby form? And do I just mix this in or what do I do with the thin layer on top? It just breaks up if I touch it.

When does a starter become inedible?

I had my fourth baby plus several other big life situations and neglected my sourdough starter... I think it was about 3 or 4 months in the fridge unfed! I didn't see any mold but the alcohol/fermentation smell is strong so I'm seeing if I can revive it. But it got me wondering - is there a point when it isn't safe to eat anymore? (Assuming there is no mold)
