Is all brisket the same?
I’ve got no problem making a decent 10, 15 or even 18 pound brisket… But I’ve got a few in my freezer that are about 2 pounds and my attempts have come out really dry. Of course, total cook time will be different, but is it the same rule of thumb for temps? Stall around 160 then wrap and go to 200-205?
