Engine Oil Advice NEEDED

I am sure this is asked a lot on this sub but I really am unsure what to do here.

I recently bought an 1993 Toyota Hiace extra high roof van to do van life in New Zealand.

I have been struggling with getting the engine oil to a desirable place. First in the beginning it felt like I poured at least 3/4 of a litre and barely saw the line move on the gauge.

Then I added small amounts consistently throughout a multi day 250km drive. Totalling to about 1L of oil.

At my previous stop (about 100km ago) I checked and it seemed like there was way too much oil in there like I had over filled it. I was stressed but didn't have time to drain it so just left it. Now I checked it here and it is basically empty.

For extra context. I haven't seen any oil on the ground after being parked overnight and while there is a puff of whitish smoke on start, there aren't huge clouds behind me when I drive.

See attached the image of the oils current level. I just added a 1/4 of a litre and once again didn't see it move but going to go do other things and check later again.

I need advice on how to ensure I am getting an accurate reading and how to determine what is actually happening.

Also the previous owners had the head gasket replaced as it was leaking oil statically.
