Made a simple fusilli with tomato sauce, veggies, herbs, and fresh basil.

Nothing fancy, just one of those meals that somehow hits every time 😂

That crispy cheese on top is the whole reason I make lasagna 😭🧀

Homemade Lasagna 🧀🍝

Layers of rich meat sauce, creamy béchamel, pasta and plenty of cheese, baked until the top is golden and bubbling.

Ingredients

For the meat sauce

  • 1 lb (450g) ground beef
  • 1 onion, finely diced
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 2–3 cloves garlic, minced
  • 2 cups tomato passata/crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt & black pepper
  • 1 tbsp olive oil

For the béchamel

  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2½ cups milk
  • Salt & pepper
  • Pinch of nutmeg

For assembling

  • Lasagna sheets
  • 2 cups shredded mozzarella
  • ½–1 cup grated Parmesan

Instructions

  1. Heat the olive oil and sauté the onion, carrot and celery until softened.
  2. Add the garlic and ground beef. Cook until the beef is browned.
  3. Stir in the tomato paste, crushed tomatoes, Italian seasoning, salt and pepper. Simmer for 20–30 minutes.
  4. For the béchamel, melt the butter, whisk in the flour and cook for about 1 minute.
  5. Gradually whisk in the milk until smooth and thickened. Season with salt, pepper and a little nutmeg.
  6. Start layering: meat sauce → lasagna sheets → béchamel → cheese, then repeat.
  7. Finish with a generous layer of béchamel and mozzarella/Parmesan.
  8. Bake at 375°F (190°C) for about 35–45 minutes, until bubbling and deeply golden on top.
  9. Let it rest for 10–15 minutes before cutting.

That golden cheese layer is non-negotiable. 😭

My family says these are bakery quality... are they just being nice? ⭐

Spent the afternoon making these double chocolate muffins and topped each one with a swirl of Nutella while they were still warm. They turned out soft, rich, and super chocolatey. Definitely making another batch soon.

The recipe :

Ingredients

  • 2 cups (250g) all-purpose flour
  • ½ cup (50g) cocoa powder
  • 1 cup (200g) sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • ½ cup (120ml) vegetable oil
  • 1 cup (240ml) milk
  • 1 tsp vanilla extract
  • 1 cup (170g) chocolate chips (optional)
  • Nutella for topping

Instructions

  1. Mix the flour, cocoa, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the eggs, milk, oil, and vanilla.
  3. Combine the wet and dry ingredients until just mixed, then fold in the chocolate chips.
  4. Fill muffin liners about ¾ full.
  5. Bake at 180°C (350°F) for 20–25 minutes.
  6. Let cool for a few minutes, then add a spoonful of Nutella on top while the muffins are still slightly warm.
