Previous starter was super strong

My previous starter was very active and strong it would rise, bubble, & double. It was 50g and I and I reduced to 20g I’ve been feeding 1:1:1 ratio using room temp water and bread flour. it’s not bubbling and not really rising. It did grow but not like it was before. The smell is pleasant however. Any tips? Is this okay? Do I even have a problem? lol

How much starter?

New to this community! I am wondering how much starter do you keep on the counter? I want to be able to maintain and not create a monster 😂 I also have 100g on the fridge as a back up (is that too much?)

Again, I am new to this and looking for advice!
