What to use as finish

Sanded this dresser down and rubbed mineral spirits on to get a look at it (assuming its cherry but im a newbie so what do I know) I want to keep its natural color for the most part but I dont like the super red and super light contrast. Wondering how I get a middle ground or at least close to one? I ordered the zinsser shellac after watching one video but idk if thats the best route

Are the drawer features able to be saved?

Just picked this up at an estate sale. Its so beautiful but the top obviously needs to be redone. Will I regret sanding down the whole piece and restaining? Its got some scratches that I just dont know how to repair without sanding but I obviously love the drawer details! (Also they may be veneer i dont know)

The dresser that I picked up from a neighbor has some cracks on both sides. Its a very thin wood. Wondering on how to repair these?
