I messed up
So when I left work at 330 I had a small rack of beef short ribs in my truck vacuum sealed and I forgot about them until 830 ish. I grabbed it and it still feels cool but almost room temp.
Was 5 hours no refrigeration to much or could it still be good. Color still looked fine, still had a little condensation on the package like I said almost cool but close to room temp. ???
I put it in the fridge in hopes I can bind and rub it and smoke it Sunday ..
