hello chefs

Hello chefs,

I just turned 19 and I started working as a kitchen assistant one month ago. My passion for cooking comes from my childhood. When I was little, I used to make simple things like pancakes and other basic dishes, and I would imagine that I was a chef, haha.
My mother was also a cook, and whenever she saw me making food, or at least trying to, she would always tell me that if I liked it so much, I could become a chef one day. After I lost her, those words stayed with me. Because of that, I applied for a job at a guesthouse in my hometown, which is a small town in Romania, and now I work there as a kitchen assistant.
I work 15-hour shifts. I work one day and have the next day off. Right now, I am still at the beginning of my journey and I am trying to learn as much as possible. I work in a fairly limited kitchen where traditional Romanian food is the main focus, and sometimes I feel like it is difficult to learn new things because I do not get many opportunities.
At the moment, I mostly prepare salads, pizzas, burgers, and a few desserts. However, I want more than that. My plan is to stay at my current workplace throughout the summer, gain more experience, and learn everything I can. Then, in September, I would like to leave and find a job in another country where I can learn European cuisine at a higher level, whether that is in Italy, France, Spain, England, Ireland, or another beautiful country with a strong culinary culture.
I want to learn from kitchens that operate at the level I aspire to reach.
To be honest, I am a little scared because this next step, moving to another country, is something I will have to do on my own. It is not that I am afraid of adapting. Once I get comfortable in a new environment, I am a very communicative and sociable person. Still, I have some feelings that make me a little sad because I know I will be alone in a new country in the near future.
At the same time, I feel ready to take this step and leave my comfort zone behind.
I am currently looking for an opportunity to work abroad starting in September or October. I would also appreciate any advice about my future, what I should expect, and how I can continue improving as a chef.
Thank you very much, Chef ❤️
